Mushroom Mutter Briyani - Chettinadu Style (SuperChef Price winning receipe)

Mushrooms are not very tasty but , when marinated in right way, they come out to with such wonderful flavors and taste, its a boon to vegetarians..

I wanted to try mushroom briyani and have tried so many times, though I am good at making Briyanis I always found making a Mushroom Briyani is quite tricky as lots of water ooze out  of mushroom which makes the briyani to become sticky

Some tips are:
Marinate mushrooms, at least for 2-3 hours; if overnight marination is done.. the recipe is going to come perfect
Don't cut mushrooms too thin as they may get dissolved (one big button mushroom can make 2-3 pieces)
Fry onions in ghee/oil and add them at last
Use open pan and Dum style ends up giving best results

Here goes the Suryan FM prize winning recipe:

Serves : 4 people

Marination :
Ingredients :
Mushroom - 1 packet
Mutter - 1 cup
Chilly Powder (Kashmiri) - 1 spoon
Coriander Powder  - 1/2 spoon
Ginger Garlic paste - 1 spoon
Garam Masala Powder - 1/2 spoon
Sombu Powder - 1/2 spoon
Jeera Powder - 1/2 spoon
Curd - 1/3 cup
Maggie Vegetable taste maker cube - 1/2
Salt
Coriander leaves - handful
Mint leaves -handful

Clean and cut mushrooms and add the above ingredients and marinate it over nite or at least 2 -3 hrs before you make the Briyani

Briyani Preparation
Rice:
India Gate Basmati Rice : 2 cups

Fry rice in ghee and pour water and keep it aside for 30 min

Cocunut milk : 1 cup
Add lime, when you cook rice

Seasoning Ingredients:Onioins -2
Patta- 2
Kerambu - 2
Bay leaf - 1
Kadal Pasi -1
Elachi , Ellakka -2
Sombu - pinch
Jeera - pinch


Masala for Briyani
Ginger - small piece
Garlic - 4-5 pods
Small onion - 4-5
Green chilly -2
Coriander leaves - handful

Grind all these ingredients into a paste and keep Aside (Masala 1)

For DUM : Make a dough with wheat and keep it aside

Process:

1. Cut oinons very thin and Fry in Ghee / oil (desired amount , dont use too much oil as well) until it becomes dried and fried to brown color, Use half qty of the onions in the marinated mixture and half to dress it at last

2. Pour Ghee/Oil (half qty each) ; add all the seasoning agents and fry till the aroma fills in air now add the Masala 1, and fry till the smells goes

3. Now add the Marinated mushrooms and keep frying it till the oil pops up and appears to look delicious

4. Add rice , lemon and also salt to taste

5. Add 1 cup of cocunut milk and 3 cups of water for 2 cups of rice and close it with a pan lid

6. After 8 min in high flame, close the vessel with the dough and place it in sim for 10 min (place it over a tawa if you feel the lower layer may get burnt.

7. Keep the lid covered for 15 more min and then open and mix the Briyani using fork

8. Delightful briyani is ready for your taste buds and can be served along with Raita and Thalsa
