Vendakkai Vatha Kolambu (Ladies Finger Vatha Kolambu)

Vendakkai is my ever favorite veggi and it such a yummy one , prepared in any way tastes adorable...
Here goes a vatha kolambu version which I prepared as this was the last one left in my fridge for the week.

Ladies figer, when used in sambar or for kolambu should be slightly fried with little oil in kadai otherwise it can become a little messy as they can become sticky
Preparation time: 40 min; serves : 4 people

Ingredients:
Ladies fingers : 250 gms
Tamarind : lemon sized (squeeze in a  250 ml of  water and keep aside) called Puli thanni
Chilly- Coriander powder mix (kolambu thool) - Best if homemade - 2 spoon
Turmeric powder- 1 pinch
salt - to taste
Manathakkali vathal (optional) (this gives the vathal taste to kolabu) - 1 spoon
Jaggery - small pinch

Season:
Mustard seeds- 1 spoon
Urad dhal- 1/2 spoon
Channa dhal -1/2 spoon
Curry leaf - 1 spring
Red Chilly (this is also a vathal, finds an ok place for vatha kolambu) - 3
Vendhayam - 3/4 spoon
Jeera -1/2 spoon
Seasame oil - 1 cups
Garlic pods (optional) - 5-6

Process:
1. Pour a desired quantity of oil and heat it splutter the seasoning items and fry till roasted nicely.
2. Add the manathakkali vathal and fry
3. Add the already fried ladies finger to this and fry well
4. Add turmeric powder, chilly powder and salt and keep frying
5.Now add water and allow it to cook
6. Add Puli thanni and cook for 15 min open
7. Add jaggery (helps to elute out oil separately) and cook till oil comes out and forms a beautify layer

Tangy Vendakkai Vatha kolambu is ready to delite you. You can add in rice ,serve with any porial or kootu.

Yera Kolambu / Prawn Stew Gravy

Era (Prawn) / Murunkkai/ Kathirikai kolmbu

Ingredients
Prawns (250 grms) Cleaned and washed kept aside (You got to remove the black intestine and wash it well) (Frozen prawns also go well for this)
Murukkai - 1 num (Drumstick) gives a good smell for the dish
Kathirikai (mullu kahrikai will be the best)
Tamrind (1 lemon size) (Soak and mix it in water and keep aside)
Tomatoes - 2 num(ground and add it in tamrind , add kolambu powder ,turmeric powder as well
small onions - 15 num
Garlic - 10 pods (smash it with a hammer and keep it)

Seasoning
Mustard seed
Fenugreek
Cumin Seeds
Curry leaves
Red chilly

Procedure
Keep a pan, pour a liberal qty of oil ( for these types of curry the curry tastes good only when a good quantity of oil is poured)
When hot add all the seasoning agents and saute until the items gets a good fried up
Then add the Garlic pods and saute it
Now add the small onions and fry them until it changes to golden brown color
Now add kathrikai, murukkai and fry it
Add the tamrind water which is mixed with tomato, kolambu powder, turmeric powder.
Now as the kolambu boils, and when the vegetables found cooked add prawns and leave it not more than 4-5 min
Now as the oil seperates from the kolambu and gives a beautiful color
Tastes heavenly with Rice and Appalam. Very Yummy tasty dish. This is one of the best goodies I make.

Karrupu Konda Kadalai Kolambu !! Chickpea stew

This is a day to day kolambu made with chickpea an easy one to make and believe me, you can be a great cook making this simple dish..

Here goes that fantastic kolambu recipe


Preparation time  : 20 min ; serves : 4 people

Ingredients:
Black chickpea - 1 cup (soak over-nite and steam with salt, keep it aside)
Tamarind - a big lemon sized ball
Salt - 2 tsp or to taste
Turmeric powder - pinch
Chilly coriander powder - 1 and 1/2 spoon
Kolambu thool (available in market) - 1 spoon
Coconut milk - 1/2 cup
Onions - 2 medium
Tomato - 4 small sized

Season:
Oil - 4 -5 tsp 
Black mustard seeds - 1/2 tsp
Urad dal - 3/4 tsp
Channa Dal  - 3/4 tsp
Red chillies (dry) - 2 nos.
Jeera - 1 spoon
Fenugreek -  1/2 spoon
 
Hing / Asafoetida - 1/2 tsp
Curry leaves - a few
 
Process:
 
Heat  oil in a kadai, once hot, add the season items and fry till its brown

Now add onions and fry till it changes its color 

Now add turmeric powder, chilly coriander powder, kolambu thool and fry well

Once done add tomatoes and cook for a min

Now add the tamarind water (tamarind can be soaked in the boiled chickpea water which will add taste to the kolambu) and also the black chickpea

Cook for 10 min and add the cocunut milk in the last

Cook for another 5 min and serve with rice and appalam
